- Combine it with coconut milk, water, and a pinch of salt.
- Bring it to a boil, reduce the heat, and let it simmer for 18-20 minutes.
- Once done, let it rest, covered, for 10 minutes (don’t peek!).
- While the rice is cooking, prep that tropical salsa:
- Toss all the salsa ingredients into a bowl.
- Season with salt and fresh lime juice.
- Let the salsa sit and get all those flavors to mingle and get cozy (like a good relationship—it gets better with time).
- Now for the star of the show, the grouper:
- Pat the fillets dry (no one likes soggy fish!).
- Season generously with salt and pepper.
- In a pan, combine the juice from the oranges, lime juice, and honey. Let it reduce until syrupy.
- Add in the butter and fresh herbs.
- In a separate pan, sear the fish until golden and crispy on the outside.
